Vegetable & Halloumi Skewers - Recipe

For non-meat eaters we’ve come up with a veggie recipe which is easy to make and bursting with goodness whilst still allowing you to cook outside!

Vegetable & Halloumi Skewers


You’ll need:

Skewers- metal are preferred.

Sharp vegetable knife

Mixing Bowl


A choice of veg:

E.g. Onions, Courgette, Red Pepper, Cherry Tomatoes, Portobella Mushrooms (Think big)

Halloumi cheese*



Chicken, lamb

If you haven’t tried halloumi cheese before, give it a go! The semi-hard cheese from Cyprus tastes amazing once cooked and has a whole different texture.It can be made from cow, sheep or goat’s cheese, and has quite a salty flavour - which is what we love about it. Because of its high melting point, it's great for grilling and frying and makes it perfect for these skewer, as it won't melt off them and mess with your barbecue.

To make:

  1. Slice the courgettes into ribbons and dice the red pepper. Keep the cherry tomatoes whole.
  2. Cut the halloumi into cubes of about 2cm.
  3. Put everything into a bowl and mix well.
  4. Thread on to 8 skewers. If you are using wooden skewers, make sure soak them for at least 30 minutes first, so they don't burn when cooking.
  5. Put the skewers on the grill for 5-6 minutes, turning every minute.


Add cooked chicken/drizzle with a pesto sauce and enjoy!
